Easy-Peasy Christmas Pudding

Christmas Pudding

Ingredients

300 g (11oz) Fruity Nutty Cake Mix
100 g (3½oz) butter, softened, plus extra to grease
100g (3½oz) homemade cranberry sauce
2 tbsp golden syrup
100 g (3½oz) dark brown soft sugar
2 medium eggs, beaten
100 g (3½oz) plain flour
1 tbsp mixed spice, heaped
1 medium apple, grated
Zest of a small orange


Method

Grease a 1.2 litre (2¼ pint) pudding dish. In a mixing bowl, add the golden syrup and cranberry sauce and mix well. Put two-thirds of the mixture into the greased pudding dish, keeping back the remaining mixture.

Beat the butter, sugar, eggs, flour, Fruity Nutty Cake Mix, mixed spice, orange zest and grated apple in a separate bowl. Spoon the mixture into the pudding dish.  Put a piece of parchment paper on the top to cover the surface.

Put the pudding dish into the microwave on medium power for 9min until firm to the touch. Let the pudding rest for 10min before turning out on to a plate. Add a little brandy to the remaining cranberry mixture to loosen it up and pour over the top of the pudding.
