Blueberry and Chia Seed Jam

Blueberry and Chia Jam


250g Fresh Blueberries
1tbsp boiling water
1/2 tbsp honey
2tbsp Chia Seeds
1tsp Cinnamon
Squeeze of lemon



Add the water and the blueberries to a pan and simmer until soft for 3-5 minutes.  Squish the berries with a fork until you have a paste.
Stir in the honey, cinnamon and lemon juice.
Take the pan off the heat and stir in the Chia Seeds.
Decant into a bowl, cover and leave in the fridge for 1-2 hours to firm up. 

Makes 10 portions.
Only 29 calories per portion and a great low sugar version of jam, which is packed with health supporting properties!
