Ingredients
100ml soft coconut oil (not melted)
70g dark brown sugar
250g plain flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. ground cardamom
1/2 tsp. sea salt
1 tbsp. water
Method
1. Preheat the oven to 180C and line a large baking tray with greaseproof paper.
2. Cream the coconut oil and brown sugar with an electric mixer, or by hand.
3. Add the blackstrap molasses and mix again.
4. Combine the flour, cinnamon, baking powder, cardamom, ginger, and salt in a separate bowl.
5. Gradually add the dry ingredients to the wet. Add the tablespoon of water.
6. Roll the dough into 16 small balls, place them on the baking tray, and press them down slightly. Bake for 10 minutes.
7. Leave to cool for 10 minutes before enjoying.
