Selenium
Selenium is an essential mineral with several important roles in the body. It forms an integral part of the free radical scavenging enzymes Glutathione Peroxidase which has an important natural anti-oxidant role in the body. The selenium content of food is dependent on the levels present in the soils.
These levels tend to be low in Britain presenting a problem for farmers who often have to supplement their livestocks diets with selenium. However, very little can be done to boost the selenium levels in vegetable crops and refining of cereals further reduces the selenium content by up to 75%. Official figures from MAFF show that 8 out of 10 people already have a deficiant intake of selenium.
