It has long been recognised that regular consumption of olive oil is an important part of the much heralded ‘Mediterranean Diet’. Researchers have now discovered that certain compounds called polyphenols which are present in small amounts in virgin olive oil, may be largely responsible for the healthy attributes of the oil.

Research shows that the polyphenols can protect blood lipids (fats circulating in blood) from oxidative damage. It is well known that the oxidative damage of blood lipids can adversely affect cardiovascular health.
